    I have struggled with my wicker banneton baskets since I started baking. My dough would often stick to them, and I found them hard to clean. I ended up throwing them out because I saw little bugs crawling in them and it freaked me out!

    I’ve since been using my regular old glass pyrex bowls to proof my shaped loaves in, and it’s been working great! Just line with a cloth napkin coated in rice flour, fold the napkin over the top of the loaf to keep it covered, and stick it in the fridge. Works like a charm! My loaves never stick now and they hold a great shape.

    Yup. I have bannetons but sometimes use just big mixing bowls lined with tea towels when I don’t feel like dealing with the cleaning.

    I’ve also done this with Rubbermaid containers as well

    That’s what I do! There are some sourdough tools that I find are optional and bannetons are one of them.

    One time I wanted to try making mini loafs and only had glass bowls. I was worried a bit because the dough wouldn’t “breath” like it can do in the bannetons, or it would stick to the sides, or somehow turn out soggy. Nothing bad happened. The loafs turned out just fine.

    Rice flour is your friend when using a banneton. No need to line it. Sprinkle and shake the rice flour around the banneton. 👍🏼

    I do the same except I use a small mesh colander lined with a floured kitchen towel. The mesh lets the bottom of the bread breathe so it doesn’t get soggy or stick to towel.

    I use an old 2 qt Pyrex casserole dish for my proofing basket, too. I’ve been on the lookout for another one, as I sometimes bake on consecutive days.

    I’ve been doing this for decades. I was confused when I started seeing bannetons for sale in cooking supply stores.

    yeah I use a variety of bowls and tupperwards. bannetons are super overrated and a PITA for some fancy lines

    I used to do this too until I picked up a few Chinese woven baskets from Goodwill. Bannetons are expensive but the Goodwill baskets only cost me $1 each.

    I don’t get it. Bannetons have only been a thing since covid. Prior to that people used whatever they happen to have, including plastic bowls. I’ve been making bread for decades and I have never owned a banneton.

    Every holiday or family event when I’m making way too much bread, this is what I do. Comes out great!

    I used beeswax wraps dusted with flour instead of tea towels and then I don’t have to wash them in between – just allow the flour to dry after using
