Garlic butter caramelised mushrooms

20 garlic confit cloves
3tbsp / 50g butter
1tsp thyme
500g / 1lb mushrooms, button or swiss brown
1tbsp olive oil
2tbsp lemon juice
1tbsp parsley, finely chopped
Salt and pepper

1. Preheat oven to 220°C/450°F (200°F fan).
2. In a small pot on a low heat, add the garlic confit, butter and thyme. Mix through until well combine and the butter has melted. Alternatively, you can place everything into a microwave safe dish and microwave for 2 minutes, stirring at every 30 second interval.
3. In a large bowl, combine the garlic butter, mushrooms and a pinch of salt and pepper. Using a wooden spoon, gently stir through until the mushrooms are well coated.
4. Spread the mushrooms onto a baking tray and drizzle over the olive oil. Bake for 25 minutes, ensuring you do not toss or turn them.
5. Remove from the oven and squeeze over the lemon juice. Finish off with a sprinkling of parsley.

  1. I reckon the garlic would be burned, maybe better to mince uncooked garlic and cook together

  2. looks amazing, but i guess its more like, garlic butter with moshrooms than mushrooms with garlic butter xD
