For The Avocado Egg Salad
▢ 1 large ripe avocado
▢ 1 lemon, juiced
▢ 3 large eggs, hard boiled and coarsely chopped
▢ 3 tbsp Greek yogurt
▢ 1 celery stalk, finely chopped
▢ 1 shallot, finely chopped
▢ 1/3 cup chopped parsley, plus more for serving
▢ 1/3 cup chopped dill, plus more for serving
▢ Kosher salt
▢ Ground black pepper
▢ Red pepper flakes, or Aleppo pepper, optional
▢ Extra virgin olive oil

For Serving
▢ Bread or lettuce wrap (I used ciabatta rolls)
▢ Romaine lettuce leaves

  2. I am gradually eliminating my beloved Hellmann's mayo from my dishes and so far, we're not missing it at all, using avocado mayo. This egg salad looks delicious to me, but the true test will be what my husband says… we shall see.
