Ingredients
4 boneless, skinless chicken breasts
1/2 cup freshly squeezed lemon juice
1/4 cup olive oil
4 cloves garlic, minced
2 tbsp chopped fresh oregano
1 tsp dried thyme
Salt and pepper, to taste
1/4 cup chicken broth (optional)
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, whisk together lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
Add the chicken breasts to the marinade and mix well to coat. Cover the bowl with plastic wrap.
Refrigerate for at least 2 hours or overnight (6-8 hours).
Remove the chicken from the marinade, letting any excess liquid drip off.
