INGREDIENTS
12 oz box jumbo pasta shells
10 oz shredded chicken breast
1/2 cup frozen spinach (6 oz thawed and pressed)
15 oz container ricotta cheese
1 tsp Italian herb blend seasoning
8 oz mozzarella cheese
4 oz grated parmesan cheese
4 Tbsp unsalted butter
1 Tbsp cooking oil
2 Tbsp diced onion
2 cloves garlic
1 cup sliced sun-dried tomatoes
1 tsp crushed red pepper flakes
1 1/2 cups reserved pasta water
2 cups heavy cream
salt & pepper to taste
Garnish with fresh basil leaves

I've been making this dish for 35+ years for my family and they always LOVE IT!! It's such a simple dish to make, crispy edges, bubbly (it looks pretty similar to what your dish came out looking like), very filling and for those who would like a different option than having a meat in their dish or casserole, this is an awesome alternative and it's packed full of protein. Or, for a meat option, you could also add chopped up ham or shredded chicken/turkey. It's delicious either way but I prefer the vegetarian option.
