The other day i had to return some bacon to HEB(Wright Bros) because it like all fat. And i know bacon is supposed to have like, a lot of fat but the strips were like 98% white.
And bacon, like everything else is $$$. Cut to JNL BBQ off Riverside that cures their own and sells to eat there or to take home and cook. THICK CUT high quality stuff and for not a lot more than say Central Market which is $10/lb and there’s is $12-$13/lb and much better.
With Salt & Time gone I’d say this is the spot to get good bacon to cook at home. And Ben and Sarah Lambert are great people, and have the best Carolina style pulled pork in town.
