Crispier than any fried wing I’ve had. Air dried wings to start, pressed with paper towels before coating with his blend. I let them set 24 hours and then baked them. Holy sh#t

  1. Yep, it’s hard to improve on this technique. You can apply that technique to other cuts of chicken and it works just as well!

    Is this where he uses baking powder and his convection oven?

    Haven’t heard that guy’s name in years. He used to pop up on my YouTube feed all the time then stopped showing up now that I think of it.

    And I made great wings at numerous restaurants in my foodie career, (none of which were breaded or battered or coated with baking soda or cooked in an “air-baker”). We called them convection ovens, and we used them for baking, which is what ovens do. 😁

    Personally, when I make wings I’m going for maximum flavor, crispiness is not the only measuring stick, but relatively easy to achieve with nice hot oil, which has the additional benefit of helping to seal in and contain all the meat juices.

    I give you credit for calling them ‘baked’ at least, and not oxygen-fried or something foolish. When you crank the oven up high you can make some fantastic roasted wings, with great seasoning, like Jerk, or Cajun.

  6. I discovered his method a few years back and have never fried since. It’s so simple, so easy, no mess and INSANELY crispy. It’s also great for crowds as you can just load up trays of wings in your fridge and just pop them in the oven.
