25lbs of cake is apparently too much cake for 40 people. Who knew? (Made a cake for my mother-in-law’s 75th birthday)

    Three tiers, three 2-inch layers per tier, cut in half (a couple removed), for a total of 16 layers of cake and 13 layers of filling.

    # Bottom tier

    * Lemon cake: 600g AP flour, 1.5tsp baking soda, 3/4tsp salt, 3 sticks unsalted butter, 525g sugar, 6 large eggs, 1.5tsp vanilla extract, 1.5 tsp lemon extract, 1.5 cups Buttermilk, zest and juice of 3 lemons.

    # Top tier

    * Vanilla American buttercream (2 sticks unsalted butter, 2 sticks salted butter, 6 cups powdered sugar, 1tbsp cornstarch, 1/4 cup milk)

    Made about 3.5 batches of buttercream for the whole cake – used it as a dam for all the layers, and coated the entire outside in it.

    It looks amazing but I am curious about how you served such tall cakes. It looks like each tier has 5 or 6 layers of cake. Did you cut each tier into thin slices with all the layers in each slice, or did you split the tiers vertically for slicing?

    Serious question here — how much too much cake was that? Twice as much? Three times? Back of the envelope here, I’m guessing 4 oz cake per person, that makes 10 lbs for 40 people. What is your guess after the fact about how much was needed? Beautiful cake by the way, I’m asking because more of an engineer than a baker … gotta work out the numbers … `8^)`

    It’s absolutely stunning!

    Back in pastry school I learned that a recommended serving of dessert per person (after a meal) is 70 grams — hopefully this helps with future cake planning!
