Here's King Arthur 's Pain de Campagne recipe demonstrating how to do the bare minimum and still get great results: the starter is unfed (basically discard), and you're done mixing and folding in an hour. To add extra laziness I also just used a bread pan for the final proof and put the whole thing directly in the oven with another upside-down bread pan on top. No banneton, no fancy dutch oven.

    Did you put all the dough from that recipe
    Into one bread pan and bake or did you split the dough into 2 bread pans?

    I’m doing a similar recipe and I love how easy it is, tastes perfect to me. But I can never get it big enough to really use for sandwiches. I see this recipe calls for 7.5 cups of flour!!! So I imagine it will be a better sandwich loaf size
