Two bone in turkey thighs. 4 minutes each side on high burner then cooked indirect in grill for about 1hr 20 between 350 and 375 with hickory chips in two smoke boxes. Pulled at 175

I’ve been staring at this for five minutes and I’m still not convinced the first picture isn’t soft shell crab or something

Looks phenomenal OP! I want to try this on my Weber sometime but I always just end up using my charcoal smoker. Was it pretty easy to get dialed in?

Where did you get turkey thighs? I’ve seen breasts and legs in grocery stores before but never thighs.
Looks great btw, that’s a very impressive smoke ring you got there I haven’t seen one that prominent on turkey before.
