Separated the wings and did a dry brine.
Equal parts 1/2c salt and sugar
2 tsp garlic powder/paprika
Brine overnight and rinsed the next day
Confit in chicken fat for 90 minutes @ 275° oven
Cooled overnight in the fat
Air fry for 15 min @ 400°
Glazed in homemade pineapple jalapeño wings sauce

How did I do?

***next time I think I would cut the confit time down to just 60 min

    Did you have any aromatics in your chicken fat? I did turkey confit one year for Thanksgiving and the garlic I had in my fat of choice permeated my house for what seemed like months 😭
