today i made creme brulee for the first time, and for some reason a brown, foamy layer created on top of it. its not underbaked/raw and it was tasty, but i just dont know why did the layer create. i baked it in a water bath for 45 min in 150C

    150c is too high. Try 100c, and bake until it slightly jiggles
