Hey everyone, it’s my birthday today ✌🏼️! I’m gathering some friends and family this evening around 5 p.m., and I’ve got a 15lb brisket going. It’s been cooking since 10 p.m. last night and now it’s 11 a.m., holding steady at low 200s. Should I wait a bit longer, or is it time to wrap it in butcher paper now?

Then I’m planning to crank the temperature up to 225 or 250 once it’s wrapped and wait until it’s probe-tender, around 205. Does that sound like a good plan?

    If it’s at 200 already you need to pull it now, poor some tallow or melted butter on it, wrap it up and let it sit in a cooler until dinner time.

    Don’t wrap it until it has a nice bark, which it currently doesn’t.

    I personally think you’re cooking way too low. It’s nice to be at 200 overnight so you don’t overcook in your sleep, but now you should be higher. 225 or 250 to develop a bark and give it time to finish and rest before serving

    I would turn the grill up to 250 now, and not wrap it until you like the way the bark looks. Once you wrap I would turn it up to 275. This will help render the fat better.

    If it’s only 160 internal now, you might run out of time and need to speed things up, the wrap will do that.

    Tight wrap and bump grill up to 250 or 275. You need to let it rest at least an hour before opening so build backwards from there.

    Thank you so much, everyone! As most of you suggested, I just cranked up the temp to 250—when I posted, I had just set it to 225. I’ll wait for a good bark to form, then wrap it and increase the temp to 275. I should have enough time since we’ll probably be having this beast for supper around 6 or 7 🤞🏼.

    If that’s the tragaer probe ide double check with a better one there shit I don’t even use mine threw it in the garbage thing was all over the place always calibrated it multiple times I don’t trust it anymore hopefully this isn’t the case dor you

    You need to clean that smoker. All that work put into that Brisket you ruin it by not cleaning the smoker.
