Focaccia / My Italian neighbors showed me the recipe.
Ingredients:
Dough:
370ml water
20 gr fresh yeast
1/2 tbsp sugar
1 tsp salt
2 tbsp oil
Approx. 550-600gr flour
In addition:
olives
rosemary
tomatoes
Coarse sea salt
Pesto
For sauce:
30gr butter
1 clove of garlic
Preparation:
Knead a very sticky dough with the above ingredients using a spatula, cover and leave to rest for 45 hours. Then wet your hands well and stretch and fold the dough. Cover and repeat after 30 minutes. Line a baking tin with baking paper and brush with 2-3 tablespoons of oil. Turn the dough over it. Fold in the sides and turn the dough. Cover and leave to rest for 30 minutes. After the resting time, grab the dough from underneath and carefully spread it out. Using oiled fingertips, press the dough into hollows without breaking the air bubbles. Spread the pesto, olives, tomatoes, fresh rosemary and coarse sea salt on top and bake in a preheated oven at 200 degrees top/bottom heat for approx. 30 minutes.
Melt the butter and grate the garlic. After the baking time, spread the garlic-butter mixture over the top and leave to cool.
