Copycat Olive Garden Fagioli!

This hearty Italian style soup is perfect for a cold winter day. This is a favourite soup of THE @stanleytucci, so you know it’s gonna be good!

INGREDIENTS
1 large onion diced
2 medium carrots sliced thinly
3 – 4 garlic cloves finely chopped
1 lb lean ground beef or turkey
1 (19 oz) can diced tomatoes drained
1 (15oz) can white or red kidney beans ( 2 cups)
2 cups tomato pasta sauce
4 cups beef or chicken stock
1 tbsp dried Italian seasoning or dried basil
¼ tsp salt
1 cup small shell pasta
½ cup grated parmesan cheese
Chopped basil

INSTRUCTIONS
1. Dice onions, slice carrots and chop garlic. In a large soup pot add oil and onions and sauté just until softened about 5 minutes. 
2.  Add carrots and garlic and saute another 5 minutes.  
4. Add beef and sauté just until no longer pink.  
5. Add drained canned tomatoes, beans, tomato sauce, stock, Italian seasoning and bring to a boil, cover and simmer for 10 minutes.
7. Add pasta and salt and let cook another 10 minutes, covered just until pasta is tender.
9. Garnish with grated parmesan cheese and fresh basil. Enjoy!
