Crust Ingredients
– 3.5 oz (100 grams) almonds
– 1.8 oz (50 grams) spelt flour
– 1 oz (30 grams) butter
– 3.5 oz (100 grams) pitted dates, soaked in hot water for 10 minutes and drained

Cheesecake Ingredients
– 14 oz (500 grams) cream cheese
– 6.8 fl oz (200 mL) canned coconut milk
– 5.3 oz (150 grams) raw coconut sugar
– 1 oz (30 grams) cornstarch
– 1 tsp vanilla extract

Instructions
– Place almonds and spelt flour in food processor. Blend well until almonds are fine.
– Add butter and dates. Blend well again.
– Place in pie pan with parchment paper. Bake for 20 minutes.
– Add all the cheesecake ingredients to a bowl and blend well.
– Spoon evenly into baked crust.
– Bake for 60 minutes.
