110g starter (made with rye, whole wheat and all purpose flour)
500g all purpose flour
375g water (purified)
10g salt

Mixed til shaggy
Set in bowl for an hour, stretched/folded (repeated 4 times total)
Last fold added good amount of olive oil

Left covered with towel in fridge for about 18 hours
Put in cast iron dutch oven cap and let rest for 2 hours
Put in 450F oven for 15 minutes with preheated dutch oven bottom (on top). Took bottom (cover) off and baked for another 15. Broiled for maybe 7 minutes.

Wasn't super sour and didnt spring super well but was delishious and my friend loved it. So excited to learn more
