I love making different harvest salad variations & this balsamic chicken harvest salad is the perfect balance of savory & sweet🌾 with roasted sweet potatoes, balsamic honey brussel sprouts & goat cheese- what’s not to love!

Ingredients:
– 1 lb chicken thighs (season with dijon mustard, salt, pepper, onion powder, garlic powder, paprika) – brush on balsamic glaze after cooking
– 2 large sweet potatoes (peeled & diced)
– 1 white onion, quartered
– 1-2 tsp cinnamon
– 1-2 tsp salt & pepper
– 1 tbsp olive oil
*roast in the oven at 425°F for 15-20 minutes until brown & crispy
– brussel sprouts, halved (season with salt & pepper)
– 1 tbsp balsamic glaze
– 1 tbsp honey
– arugula
– goat cheese
Dressing:
– 1 shallot, minced
– 1 tbsp balsamic glaze
– 1 tbsp honey
– 1 tbsp dijon mustard
– salt & pepper to taste
– 1 tsp cinnamon
– 3 tbsp apple cider vinegar
– 1-2 tbsp olive oil
