I’ve been dealing with the big SAD for weeks and the idea of cooking anything intensive this week has just been too much. Running low on groceries and rummaging through my pantry led me to a box of instant cream of wheat packets, which are 100 cal a pop. I mixed some up with water, a little bouillon, soy sauce, and some other seasonings. Topped it with a couple eggs and some sriracha and boom! Dinner for under 400 calories.
I’ve riffed on this a couple times now, adding in some frozen broccoli for something green and to bulk it out further, and tonight I changed up the seasoning to more middle eastern and added a pinch of feta cheese.
It’s super fast, easy to throw together, minimal dishes created, and really filling. Highly recommend savory porridges!

My current hyperfixation breakfast is two instant butter grits packets microwaved, then topped with 2 eggs that have been fried in a tsp of chili crisp.
Similar vibes to your meal! It’s sooooooo comforting and delicious.
