Lemon & Herb Chicken with Potatoes
Ingredients (Serves 4-6):
* 2 whole chickens, cut into pieces
* 4 large potatoes, thinly sliced
* 2 tablespoons chicken spice
* 1 tablespoon onion powder
* 1 tablespoon garlic powder
* 2 tablespoons paprika
* 1 tablespoon dried thyme
* 2 tablespoons ginger & garlic paste
* Salt to taste
* 4 tablespoons lemon juice
* ½ cup olive oil
* Dash of water
* 1 lemon, sliced
* Dried or fresh parsley
Method:
* Add the chicken & the potatoes to a bowl.
* Marinate with the ingredients above excluding the water, lemon & parsley.
* Mix with your hands until thoroughly combined.
* Allow to marinate for at least 30 minutes.
* Preheat the oven 190°C.
* Place the chicken & potatoes into a baking tray. Reserve the extra marinade. Pour over a little water & add over the sliced lemon.
* Pop it into the preheated oven for 30 minutes.
* After 30 minutes, give it a toss to ensure the chicken & potatoes cook evenly.
* Pour over half of the reserved marinade.
* Pop it back into the oven for another 30 minutes.
* At this point you want to make sure that the chicken has browned & the potatoes are cooked.
* Give it a final toss. Pour the remaining marinade & sprinkle over fresh or dried parsley.
* Grill for a further 10 minutes.
* The chicken should be thoroughly browned.
* Serve with savoury rice & enjoy!
