2 weeks of trying to order fluke from a major wholesler. Their vender, sent them fluke that's not gutted properly 2 times. Also make me wonder why the people in the fish cutting rooms never check anything for quality control. The 1st time I got it, was clearly obvious. Looked like thousand island dressing coming out the backside. The second time today being today, same issue. The last 3-4 months, I've been receiving okay fish. Definitely had reject some. I have a reputation for quality. They are making my life difficult. Always vet your deliverys.

    i really appreciate you being on top of checking the deliveries. i just had sushi + nigiri last night and it was delicious, but so much goes on behind the scenes to make it perfect for the customers. thank you!

    The major infection can be from the hooks the handler uses while processing the fish. I seen this many times, while processing my Ahi tuna. I don’t see other holes or slashes that could be from a hook.

    I can only think they are hooking it from the gills, shits gross. I just tossed half my Tuna saku block 2 hours ago because the previous sushi chef did not process correctly to my standards at least. I cut off those pieces with slashes and hooks because those hooks that are used in my opinion at least can be unsanitary af, Depending on who is using it.

    I can imagine your issue can stem from an unsanitary conditions at the warehouse. Especially if your getting the same recurring problem form the SAME supplier.

    Ask the powers that be to tell the supplier and/or look for another supplier if possible. Just so that supplier knows you’re not F ing around.

    That shit can cause a restaurant to go out of business.

    Yeah I’d stop ordering fluke.

    Our restaurant also had quality issues from the last time we ordered it, and idk if it’s worth putting on the menu.
