
Paid a good chunk of change for a grassfed brisket from HEB.. Cooked it cut it open and it just has too much fat imo.. The picture is after it has been refrigerated.. How can you ensure that the brisket isnt too loaded with fat while at the store and not cutting it open?

Grass fed my ass!!! I’ve never seen anything like that!!! I’d for sure be taking that back to the store and getting my damn money back! I personally only smoke brisket when I’m having people over. So that would definitely make me more angry!
I love a good fatty brisket and usually don’t trim my briskets much but I have never seen one that looks like that! There’s almost no meat in that cross section 😳

0% chance that was grass fed. Grass fed is way more lean than that, you don’t get that kind of fat with low calorie grass feed

The feel of it should have sent alarm bells ringing. That much thick fat it must have felt like a solid lump you could smack off the table before you even started trimming it
As a born and raised Texan who loves a pound of brisket cut wet.
I can tell you two things …
1) that’s a poorly cooked brisket
And
2) That’s entirely too wet. Even for me
oh man sorry for you, and knowing so much effort and money went into it. Id take that picture to rhe butcher that sold it to you with the recipet ask for a deal on a new one, and highlight that you trusted the butcher to know better, that is too much fat, and if they trimmed it for you,that borderline criminal,they should have used it for hamburger meat.
