They tried to rush everything out and I'm sure you can guess how that went. Creme brulee was definitely fucked. I've never seen it curdle and break before, and I went culinary school with some epic fuckups.

  1. How? Just how? No waterbath? Just dry bake? SHAME!

  2. If that was my event I’d be asking for my money back

So who schedules the banquets if not the executive Kitchen manager? Them being the executive km implies there are non executive kitchen managers who do the daily job.

  4. Wow that’s so fucked, I don’t know how you can sleep after putting out that

One of the biggest conflicts at work that I ever had was also like this. Sales office fucked something up and I was supposed to organize food and and beverages for a press event for 20 people. We had no staff and no flood there.

It was one of the first times that I just said no and let everything crash.

I was still a young and inexperienced manager and at that time I I would have rather worked 8 hours extra to make shit happen. I was very lucky that I had a very experienced KM that did hold my hand during the process.

Oh, I didn’t realize this was a video at first.

“Well, the caramelized sugar looks a little plain but it’s the custard that counts, r-”
