    He requests this dish at least once a week. This week I made it with a side of first blanched then stir fried with garlic spinach! I also made spicy pickled bean sprouts and some steamed multigrain rice! He ate everything and an additional 2 bowls of rice 😭

    Okay the recipe for the spinach:

    Soak in salted hot water in a bowl until soft. Rinse, then squeeze out excess water. Cut 4 cloves of garlic and fry in some oil until it becomes golden brown. Add the spinach and a little salt and white pepper and mix. Dish up.

    Sweet and sour pork:

    Sauce is : tablespoon of potato starch
    5 tablespoons of ketchup
    4 tablespoons of rice wine vinegar (or whatever vinegar you have)
    A bit of salt
    3 tablespoons of brown sugar (if you use white sugar it’s now your recipe and not mine)
    2 tablespoons of water
    Onion, bell peppers, pineapple

    Pork and batter:

    I used pork loin (it was on sale) and seasoned with garlic powder, black pepper, chili powder(a little don’t go crazy), a tablespoon of soy sauce (I had 350g of pork), potato starch and AP flour. I didn’t use egg I added a bit of water to make it in to a thick batter cause I wanted extra crispy pork pieces. I fried the pork first. Took out the oil but left like a table spoon. Fried some onion, peppers and USUALLY I add pineapple but I didn’t have any this time. Took out the veggies, put the fire on low and let the sauce warm up before I added in the pork and veggies. Turn off heat and mix and dish up. (I’m not good at writing recipes and I’m on mobile forgive the set up please lol)
