I use one, have for years. They make a Silpat mat for it, and I use it for most of my oven cooking. I bought one, with a Silpat, for my mom and for my child so when I share cooking strategies with them they can duplicate what I do.

I do, I have 2 full sheet, 2 2/3 sheet, and a single 1/4 size.

I like to cook my veggies separate from each other. I will make 4-5 different veggies at a time, and then combine them in different ways throughout the week into rice or potato bowls, nachos, etc. Plus my cherry tomatoes and brown mushrooms end up with a lot of juice; I like to pick one kind of juice to add to the bowl and I don’t want, for example, my tomatoes to be sitting in mushroom juice for days.
I also find that different veggies take different amounts of time to cook to the texture I’m going for, and if they are in different pans it’s much easier to manage this, especially since I am usually working with few brain cells to spare. If I am doing stovetop cooking I can put the veggies in the pan in cooking-time order, but with the oven it’s much easier to just do them each separately.

This is kind of weird post that lacks social awareness that not everyone has the same living setup and situation and therefore can’t all use the same things. I live in an apartment with smaller than average appliances so the largest I can fit in my oven is 1/2 sheet, just how it is. It’s not a “choice” its just the largest option available.
