Was going for rare, felt like I got it

    I seared it in cast iron over a propane stove outside (wife hates it when I smoke out our entire house searing them) then basted it with butter, garlic, rosemary and thyme. Once seared and the fat was rendered, I put it in the oven until internal temp of 110 and let it rest for a bit before digging in.

    I love the NY Strip, my wife and kids get the filet when we go out, but I like the strip because I get more steak

    Man. Ribeye has been my go to for a while but this sub has me hankering for a NY strip.

    Especially since in general I like rare steak but I think Ribeyes really benefit from med rare from fat content.
