Today I was unexpectedly given 7 kilos of peeled raw potatoes in a plastic bag, last use date today.
So what do you do?
I stuck one kilo in the oven with oil and herbs, raw fried a pan full with bbw spice for dinner with a couple reheated ribs, sliced a kitchen machine full of them and made chips/crisps, and boiled the rest all at the same time.
I have taken out a 3 kilo boiled ham from the freezer and tomorrow I'll make some mash and freeze some into ham slice & mash lunch boxes, fry up "pyttipanna" (hash?) from some of the boiled ones with diced ham & spices, and possibly grate up some cheese and shred a few of the taters to make hashbrowns/"swiss Rösti". All of those will be frozen in portions as well, and then we can skip cooking any time we like for a month, just microwave a box and cut fresh veggies or make a sauce to go with it. There are lots of sauce variety so we don't get tired of ham&mash, from brown gravy to garlic mayo to tomato based spicy things.
Im thankful they didn't let these small potatoes go to waste.

How do you do the crisps ? Mine either underdone or get burnt. Looks so good
I would fight for soms baked potato right now, but I am pretty hungry. This all looks so good!
