Hey guys, I’m the one that asked about how long I could store my dough for.
So I finally got my new oven Wednesday afternoon. Forgot to take the dough out of the freezer so I put it in the fridge Thursday morning. Took it out of the fridge yesterday around noon. Set it in my warm kitchen in a DO, actually on this warming pad the range top has. Kept an eye on it every half an hour, temp in the DO was about 80° most of the time.
It about doubled after six hours. Baked it. It tastes great, the crust is crispy. Inside is a little gummy, and I think the freeze killed a large portion of the yeast.
Recipe: 60% hydration standard wild yeast sourdough, and like one each of those herb packets from your local grocery store of rosemary and thyme (I bought them for stew and forgot to put them in), and like 3 tablespoons of jarlic, because I’m lazy and measure garlic with my heart.

I’ve not tried freezing but interested in seeing what others say.
I have a similar oven the bread proof setting works well for me. Keep things lower away from the heating element if you use it. If you used it I’m sure you’d figure it out. Happy baking!
