So this is actually 2 plants started from same seed from Publix red habanero. The dark green ripen to orange, the lighter ones I imagine will ripen to white or yellow?

The dark ones will likely turn light and then all will end up the same color. I had a hab type go from green to white to red. It was called branca pepper.
