Tandoori style chicken thighs with rice and homemade tikka masala sauce and green peppers. Also, a tandoori sandwich 👍🏻
Sometimes I meal prep by making food that I can prepare easily into different meals, like these.

We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

Do you cook it in the special clay pot? I’m going to need to get one for sure!
The bread was take and bake French from Ralph’s/kroger.
The green pepper I made in a scalding hot iron skillet with some garam masala, salt, and pepper. *Green pepper sliced, coated in olive oil and seasoning (I didn’t measure) garam masala salt and pepper. Seared until slightly soft.

I ate the sandwich cold with cucumber, garlic cream aioli, sliced grape tomatoes, and of course, fresh coriander(cilantro) I made it all on the spot by feeling so I don’t have recipes for the aioli. It’s literally fresh crushed garlic, mayo and a bit of heavy cream.
I’ll keep better track of what I decide to post in future. I meal prep 2-3x a week cause I get bored and love cooking.

Oh, I wanted to mention—I like to take the meal (meat, sauce, rice, maybe veggies) and make it a burrito, either using just a tortilla or using flatbread or similar. Freezes well and makes for a nice change of pace from my more burritoy burritos.

Amazing! Tandoori chicken looks legit!
When growing up if there was any leftover tandoori chicken from the previous day we’d make tandoori chicken sandwiches too, so your post struck a chord of nostalgia in me!
