Ingredients:-
* 3 tbsp olive oil
* 3 tbsp butter
* 1 large onion, chopped
* 8-10 cloves garlic, minced
* 1 packet of mushrooms, cleaned + sliced 1/2 inch thick
* 1/4 cup chopped walnuts
* salt and pepper to taste
* 1 tsp red chili flakes optional
* 2 tbsp all purpose flour
* 2.5 cups of water
* 1 Maggi stock cube
* 1 tbs fresh thyme optional
* 1 tsp oregano
* 1/4- 1/3 cup fresh cream as preference
🍄Add your olive oil and butter and melt
on medium heat, add in the onion and saute for 5 minutes. Stir in the garlic for 30 seconds. Add in the mushrooms
Stir it all to saute for 2-3 minutes.
🍄 Next add in chopped walnuts and cook for about 10 minutes until it all caramelises
🍄Next, sprinkle on the flour and stir to coat all. Cook for 2 minutes Pour in veg stock or water + veg stock cube. Mix well and let it boil
🍄Add In salt pepper and herbs and bring to a boil.Lower the heat to simmer covered for 10 minutes, stirring occasionally. Add cream and mix
🍄Transfer about half of the soup to a mini food processor or blender to puree. Add it back into the pot and mix
