Italian Wedding Soup is ” an ancient Neapolitan soup called minestra maritata, which translates to “married soup”, not wedding soup. It refers to the ‘marriage of flavors’ from the bits of inexpensive meat and leafy greens which make up the main ingredients.” Internet Excerpt. However old this recipe may be, it is our family favorite! We first experienced this soup at the Spaghetti Warehouse in Memphis TN. Unfortunately, the business is now close.

My Version – Italian Wedding Soup Recipe

1 lb cooked chicken cut into bite sized pieces Save the broth. ( I cook a whole chicken in water with 1 stick unsalted butter. The butter adds a nice layer of flavor and increases the flavor of the chicken broth.)

1 lb bulk Italian Sausage made into small meatballs, refrigerate them after making.

12 cups water or chicken broth. If using water, add 4 Tablespoons chicken bullion.

1 cup sliced celery
1 cup chopped onion
1 cup shredded fresh carrots or sliced carrots
1 cup chopped fresh spinach or 1- 10 ounces box frozen chopped spinach 1 teaspoon garlic powder or 1 Tablespoon fresh minced garlic
8 to 16 ounces ( 1 to 2 cups) vermicelli or Angel hair pasta broken into short pieces.
1 teaspoon basil
Salt and Pepper to taste.

Bring broth to a boil. Add vegetables and allow to simmer until onion is translucent. Add seasoning. Add cooked chicken. Add raw meatballs one at a time. Meatballs are done when they float to top. Add pasta. Stir and allow to cook an additional 10 minutes.

Serving suggestions: A garden salad, garlic bread, crusty artisan bread or sourdough bread, crackers. Topped with Parmesan Cheese and parsley. We serve our soups with cheddar cheese, old south line pickles and crackers.

I doubled the chicken in this recipe and added more carrots and onion.

It tastes even better the next day! Refrigerate leftovers. Makes over 1 gallon of soup. This soup is delicious and nutritious! The flavors will make you smile with delight.
