Meal Prep Weekend! Utilized both Saturday/Sunday to get the freezer stocked for the month!

A meal prep weekend! I started prepping for the entire month to get meals in the freezer and am beyond pleased with how the weekend/prep went!
Slide 1: our grocery haul, about $278.91 total. Including a handle of whiskey and a 12-pack of off-brand cola (not pictured). We shopped at Costco (149.55), Aldi ($69.74), and Ralph’s (61.62).
Slide 2/3: Freezer breakfast sandwiches: sausage, egg, and cheese. This one was straightforward! The sausage was from Aldi (7.75 for 18). I made sheet-pan eggs and then assembled and wrapped them.
Slide 4: Freezer garlic bread. I got bread free from work, so I sliced some challah and added a garlic butter mixture to both sides for a copycat freezer garlic bread. This is my first time trying it, and I’m excited to try it!
Slide 5/6: Southern-style green beans: This is my first time trying to freeze this as well, so I’m not sure how it will work. But sautéed bacon, onion, and garlic with 2 lbs of fresh green beans covered halfway with half chicken, half beef stock seasoned with garlic, onion, salt, pepper, and red pepper flakes simmered for about 1.25 hours.
Slide 7: Chicken wing prep for Fridays: Aldi did not have enough wings, so I’ll have to get more. I prepped the wings, separated the flat from the drum, and saved the wing tips for stock!
Slide 8: bonus slide! I got “ripped off” from a Costco 8-pack of 15 oz diced tomatoes. One was a 1/4 empty! 🙁
Slide 9/10: Chicken and beef tacos. I use my own seasoning mix, which is very similar to old El Paso, for simple tacos.
Slide 11/12: packs of tomato sauce for meatball subs and chicken Parmesan.
Slide 13: Hoagie Rolls for 3 nights of meatball subs in the month
Slide 14: Meatball patties’ I’ve never tried this before, but I took my meatball mixture and made patties with it to fit the hoagie rolls for easier eating. I’m excited to see how it turns out. Each one was 6.5 oz, plus extra for meatballs for lunches.
Slide 15: Mashed Potatoes: I used Yukon gold potatoes, milk, garlic, and Parmesan. Then, I topped them with two pats of butter and some extra Parmesan.
Slide 16: Meatloaf Slices: I know these look dry. The picture was taken after being frozen—this was the first time we had tried freezing this as well. We did try a slice, and it was still moist and great fresh. I’m somewhat worried how this one will turn out.
Well, that wraps up February for me! There will still be a few things I cook on the same day for the month, but I have a lot of bulk cooking done! Overall, I am very proud and have not been out to eat all year!!
