Hey team KJ,
Something that I tried many many years ago on a small French island of the Indian Ocean (Ile de la Réunion), I was able to finally reproduce it thanks in part to my KJ! Over there, during the weekends, you can buy those grilled chicken almost everywhere on the road side, so tasty and smoky delicious.

You need one chicken and the following for the marinade:
– grated french ginger (1 TSP)
– 10 smashed garlic cloves
– 2 tbsp of fresh thyme
– two cups of soy sauce
– two cups of water
– 1/2 cup oyster sauce
– one cup brown sugar
Mix all the ingredients together. Then put the chicken in a zip lock bag with the marinade and forget it for 4 hours in the fridge.

Get the KJ running with a target temp set at 170C. Once temperature has been reached, time to take the bird out of the bag on to the grill. Let cook for an hour with lid closed. While cooking, pour all the marinade in a pot and reduce untill it kind of stick to a spoon. After one hour, paint the bird with th marinade/sauce and flip it on the other side. Close the lid and wait 10 minutes.

That marinade is awesome!

    That chicken looks like it was juiced up on steroids – it definitely doesn’t look like a regular chicken lol – but it looks really dam good 👍
