Recipe:

For the dough:

290g (10oz) all-purpose flour
1/4 teaspoon of fine sea salt
210g (7.4oz) water
240g (8.4oz) unsalted butter, softened

For the custard:

250g (8.8oz) whole milk
175g (6oz) water
1 cinnamon stick
3 to 4 strips of lemon peel
5 egg yolks
11g (0.38oz) cornstarch
100g (3.5oz) granulated sugar
15g (0.5oz) unsalted butter

Bake at 500F (260C) for 10 to 12 minutes
