Braised short ribs that you can throw in a pot in 35 minutes on a lunch break (which is exactly what I did) 👏🏼

INGREDIENTS:

BEEF SHORT RIBS:
3lbs short ribs
4 tbsp Oil
1 white onion
4 stalks celery
3 large carrots
2 sprigs fresh rosemary
5-6 sprigs fresh thyme
2 tsp salt
1 ½ tsp black pepper
1 cup red wine
5-6 cups of beef stock
1 head of garlic
1 cup flour for gravy
Fresh chopped chives for garnish

Mushroom Risotto:
1 cup white mushrooms
2 tbsp oil
1 shallot finely diced
1 leek sliced
1 ½ cups Arborio rice
6 cups of chicken stock
1 cup of white wine or sherry
2 tbsp butter
¼ cup heavy cream
½ tsp salt
½ tsp black pepper
¼ cup grated parmesan

*Add the stock in ½ a cup a time, when it absorbs add another half cup and repeat until you’ve used 6 cups of broth. This process takes about 20-25 minutes*
