Ispanak Borani, a delicious combination of sautéed spinach and creamy garlic yogurt, has different version throughout Turkiye. The word “Borani” refers to a cooking technique where vegetables are cooked or served with yogurt and is borrowed into Turkish from Persian. This dish is light, refreshing, and perfect as a mezze or side dish.

There are number of versions of Borani in Turkey and differs from region to region. This is my favorite version with tender chickpeas and bulgur wheat, served on top of garlic yogurt, finished with chili butter.

Ingredients:
• 500 g spinach, washed and dried
• 1 medium onion, 100 g, finely chopped
• 1/3 cup olive oil, 75 ml
• 1/2 cup cooked chickpeas
• 3 tbsp cup bulgur wheat, medium or coarse
• 1/4 cup water
• 1 cup strained yogurt
• 2 cloves of garlic (or to taste)
• 1/2 tsp ground black pepper
• 1.5 tsp salt or to taste
• 2 tbsp butter
• 1 tsp pul biber (Turkish chili flakes)
Instructions:
1. Finely chop the onion and roughly chop or shred the spinach leaves to into large pieces
2. Heat up the olive oil in a large pan, add the chopped onion and saute for 5 mins until soft
3. Add the chickpeas, bulgur, 1/2 tsp freshly cracked black pepper and 1 tsp salt
4. Add 1/4 cup water, bring to a boil and add the spinach.
5. Let the spinach steam for 2 mins and stir to mix the spinach in
6. Stir occassionally and cook for 10- 15 mins over medium heat
7. Crush the garlic cloves, mix with 1 cup strained yogurt in a bowl together with 1/2 tsp salt
8. Remove from the heat once the spinach and bulgur is cooked and no liquid remains
9. Layer the garlic yogurt on a serving plate, add the spinach on top
10. In a small sauce pan, melt and heat up the butter
11. Once sizzling, add and 1 tsp chili flakes, stir and remove from the heat after 10 seconds
12. Drizzle the chili butter over the spinach and yogurt
13. Serve with fresh bread and enjoy!

  4. Youtube is overloaded with recipes, few can compare to this one. I am 71 yrs old with digestive issues. This recipe is perfect for my needs and so delicious. The only mistake I made was to use a regular whole milk yogurt, next time I will use Greek yogurt. I used baby spinach, 1/2 a can of chick peas and let everything sauté until well cooked. The crowning touch was the Turkish red pepper cooked in butter poured overall. This recipe is a keeper and I cannot say thank you enough!

  6. Do you have a recipe for the most basic plain "cooked chickpeas" I see added to so many recipes? I tried searching the channel to no avail, but Im a dunce. Is it just like par-boiling them or cooking them through but without seasoning? Are canned an alternative or are they too soft? Thanks for any insight!❤
