# Sweet Potato and Pomegranate Salad
**Serves:** 5
**Prep Time:** 15 mins
**Cook Time:** 35 mins
# Ingredients
* 700g sweet potato (peeled, wedged) * 3 tbsp EVOO * 250g dry pearl cous cous * 1/4 cup fresh dill (chopped) * 2 tbsp balsamic vinegar * 2 baby cos lettuce (roughly chopped) * 200 g dairy-free feta alternative (diced) * 400 g tin of black beans * 1/2 small red onion (peeled and diced) * 1 tbsp lemon juice * 1/2 cup pomegranate arils * 1/2 cup natural almonds (roughly chopped)
# Instructions
1. Preheat oven to 180 degrees C (fan forced) 2. Toss wedged sweet potato in 1 1/2 tbsp of olive oil 3. Roast coated sweet potato for 35 minutes or until edges are darkly browned 4. Meanwhile, prepare pearl cous cous per packet ingredients 5. Allow sweet potato and cous cous to cool 6. combine all salad ingredients and toss thoroughly
