i baked them at 140 degrees celsius for about 25 minutes and they still turned out like that! is it the humidity? or is it just undercooked still?

    They look a bit undercooked, yeah. Do they feel really soft? Or do they have a crisp exterior? Are you using a silicon mat? If so, I find it helpful to bake about 10 degrees higher than when I use parchment paper

    They look undercooked, probably chewier than you would prefer. They probably feel a bit heavy and moist.

    I will say that is the lowest temp I’ve seen someone use, which also means a pretty long bake time.

    That’s 284F which seems quite low. I’d bump that up to 300F(148C) and try a little less time. Check them at like 17min might need 20.

    Matcha flavored? Matcha or cocoa powder will affect it, making macaron more gummy.
    But in conventional oven, I usually bake in much higher temperature. Preheat to 175C and turn knob slightly to LOWER temperature by 3-5C. Bake for 12min.

    Another oven baked at 180C for 8 min.

    If they crack after raising temperature, let them dry more. Your relative humidity needs to be lower than 65% to dry naturally/fan or hair dryer.
