So I was soo absentminded today and my meal shows that, lol.
I don’t like green beans so I was going to have baked carrots instead but I got so busy trying to figure out how to use my mandolin that I haven’t touched in forever to cut the potatoes that I totally forgot. D’oh!!
I got busy arranging the potatoes on the sheet and doing the prebake and browning the filets. I didn’t realize till when it was time to put the filets in the oven when I noticed I had an extra pan and my carrots were on the counter. During that time I was also supposed to put the Parmesan cheese on the potatoes and forgot that too. Double D’oh!!
Moving on…I prepared the sauce and here’s a tip: if you don’t want an overpowering taste of the Dijon, only use one packet. I used both and it kind of overpowered the apricot jam. But the sauce was VERY good! I would definitely get this again or recreate it.
Despite my troubles, the pork filets were really good (will never go back to pork chops) and this meal was awesome. If you like the jam recipes, definitely add this one to your list. I just had a bunch of stuff on my mind and was scatterbrained but the meal actually would have been easy to prepare so don’t let me plain dish dissuade you! 🙂
