Pumpkin Pasta 🙂

    I have a huge box of pumpkin and beetroot(for colour) purée (made it last week and froze it).

    I sautéed Thai red chili (optional), garlic, and onion, then added the purée along with a bit of pasta water and fresh basil. I let it simmer for a while to allow all the flavors to meld.

    Finally, I added salt, pepper, and fresh oregano. To finish, I topped it with shaved Parmesan and fresh basil.
    This tasted really good !!!
