I think I found my buffalo wing recipe to settle on

    **Wings:**
    – pat dry & dust in flour mixed with spices (salt, black pepper, smoked paprika, cayenne pepper and garlic powder)
    – bake on a rack at 200°C (=392°F) for 36 minutes (flip once at halftime)

    **Buffalo Sauce:**
    – 1 part butter
    – 1/2 part ghost pepper mango hotsauce
    – 1/2 part sriracha extra hot
    – a little honey
    – a little mayo
    – a little herbal vinegar
    – a small splash of worcestershire or bbq sauce
    – spices (smoked paprika, black pepper, garlic powder, lots of cayenne pepper and a tiny bit of soy sauce)
    – gently add flour dissolved in water to get the sauce to your desired thickness
    – sprinkle coated wings with fresh chives

    **Complementary dip to cut the heat:**
    – 1 part joghurt
    – 1/4 part parmesan (in courtesy of me not liking blue cheese 😉 )
    – a small amount of mayo
    – some herbs and a tiny bit of black pepper

    Super happy how they turned out. I think this will remain my go-to regarding easy buffalo wings for a while. Propper deep fried wings would turn this one up a notch for sure but as I’m currently fryerless this will easily suffice for the time being!

    Is the butter salted or unsalted?
