



Only my third ever salsa, still experimenting. May have gone a little too spicy but it looks great. Char grilled the vegetables in my cast iron.
6 roma tomatoes, 2 pasilla peppers, 2 yellow chile peppers, 3 chile de arbol, 1 habanero, 3 garlic cloves, half an onion, olive oil, vinegar, water, salt, black pepper.
It’s still cooling in the fridge, but will try it in about an hour!

Beautiful color and little char bits. With dried chilis I like to let it rest overnight in the fridge before I feel like the final flavor develops. Infact I don’t even finalize adding the salt and lime juice until the next day, just cos I do it to-taste.
