My Pitboss sear plate is glowing red from flames touching the bottom of it. Been deep cleaned several times, cleaned the probe. I can hear the fan working. What could be the issue?

The Pitboss sear plate will do this as it’s a cheap piece of metal.

That’s why I cook on the rack above the main grate. I set a large disposable aluminum pan on the main grate with some water in it. Mellows out the hot spot over the fire pot and keeps the grill clean by catching the drippings.

Nobody gonna question the unseasoned ass chicken breasts?

Are you leaving the lid open? If so it will run wide open trying to heat up.

looks like that when you open it up in the dark as for whatever you have on there is a different question.

It’s turning red in shame from the sear on those chickens.

On a more serious note, if you had it for a while this is pretty common and not an issue. Especially noticeable if it’s colder out and you crank it up high. Some of the metal has likely been stripped down ever so slightly as well. Again, not an issue. You got a great sear spot now.

Everyone with a pit boss knows it’s like that special friend or family member. Once you know the quirks you work around it and turn it into a beneficial relationship. Hot spots, temperature fluctuations can all be leveraged to cook even better.
