Smoked brisket and tried all methods for this attempt. Foil boat and then switched to butcher paper
Ended up finishing in oven fully wrapped in foil which caused a braised effect however still turned out great

I bet it tasted good, but you don’t need to overcomplicate it.
Trim, rub, smoke to stall, wrap, wait till 202, rest in cooler for 2 hours minimum. And then slice with a knife…
