Ingredients for Kunafa Mixture:
100g Katafi (shredded filo dough)
100g Butter-Melted
1 Cup Pistachio Paste
For the Muffins:
1 1/2 cups plain Flour
1/2 Cup Cocoa Powder
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Salt
1/2 Cup Brown sugar
1/2 Cup Vegetable Oil
2 Large Eggs
1 Tsp Vanilla Extract
1/2 Cup Milk (or buttermilk)
1/2 Cup Boiling Water
2 Tbsp Instant Coffee Powder
Ingredients for Chocolate Ganache:
100g Dark Chocolate-chopped
1/4 Cup Double Cream
2 Tbs Chopped Pistachios-for decoration
Method:
1. Place the butter in a heated pan and allow to melt
2 . Add the chopped kataifi to the butter and allow to cook on medium heat, occasionally mixing until golden brown and remove from heat
3. Allow this to cool down before mixing in the pistachio paste. Set aside for later
4. Preheat oven to 180C
5. In a large mixing bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
6. In another bowl, whisk together the sugar, oil, eggs (adding one at a time) and vanilla extract until smooth
7. Gradually add the wet ingredients to the dry ingredients, mixing until combined
8. Gradually add the milk and stir until smooth.
9 .Mix instant coffee powder in boiling water and pour into the muffin mixture, gently folding it in until combined
10. Place muffin cases into a muffin tray and fill up to ¼ with the muffin mixture
11. Now place ½ Tbs of the pistachio kunafa mixture in the middle of each case
12. Top this with the remaining muffin mixture, ensuring the muffin cases are up to only ¾ full
13. ake for about 12 minutes
14. Allow the muffins to cool
15. Heat double cream in a saucepan until it begins to slightly boil and then remove this from the heat
16. Now add in the dark chocolate, mixing until the chocolate melts and the mixture thickens
17. Once the muffins have cooled, top each one with a layer of chocolate ganache
18. Simply garnish with the pistachio powder for a crunchy texture and a touch of colour
