They look nice and soft!
I don’t own a rigagnocchi, but I tend to improvise it with a fork, rolling them over the individual gnoccho. Next time I’ll have to try them smooth like yours!

They look awesome! Boiling them a little longer can definitely help if they seem too firm, but make sure to test one or two before the whole batch to avoid them getting mushy.
