I think I achieved just about a perfect medium on these filets, and managed to get a solid sear as well. Baked at 255 for 45 minutes, seared hot with olive oil, and then sprinkled with Trader Joe’s umami seasoning. It tasted immaculate. The wife agrees.

    So is olive oil good for searing or not? Most people dont recomment it, but it seems to work just fine

    Why the 8.2? Because there’s always that one judge that has no fucking clue.
