    Bay Shrimp and Bay Scallop Ceviche:

    Ingredients:

    ½ lb bay shrimp (pre-cooked)

    ½ lb bay scallops (lightly poached or raw if very fresh)

    ½ cup lime juice (freshly squeezed)

    ½ cup lemon juice (freshly squeezed)

    1 small red onion, finely diced

    1 jalapeño, finely diced (optional)

    1 small cucumber, diced

    1 roma tomato, diced

    ¼ cup fresh cilantro, chopped

    1 avocado, diced

    Salt and pepper, to taste

    Instructions:

    1. If using raw scallops, lightly poach them in simmering water for about 1 minute, then drain and cool. Otherwise, chop them into small pieces.

    2. In a bowl, combine scallops and shrimp with lime and lemon juice. Let sit for at least 30 minutes in the fridge to marinate.

    3. Add the diced onion, jalapeño, cucumber, tomato, and cilantro. Stir well and let sit for another 15 minutes.

    4. Before serving, gently mix in the diced avocado and season with salt and pepper to taste.

    5. Serve chilled on its own or with keto-friendly chips or lettuce cups.

    Pictured with wonton chips (13 carbs) suggest to lettuce cups or keto wraps if that’s too high for you. (I save it for days I can make it work because I like the wonton chips that much.)
