    Get a pan that can accommodate a metal grate or an oven safe cooling rack. It will help crisp them up and cook evenly.

    Are they just sitting in a puddle of their ju? Get them out of the drippings and on a rack while they cook

    Use a wire rack and coat them in cornstarch before you make them
